A Simple Greek Salad

Though often served over a bed of lettuce, this Greek dish istraditionally lettuce free. Served here with a block of feta and a generous pour of extra virgin olive oil (EVOO), this salad is perfect for the coming summer months.

INGREDIENTS

2 large tomatoes, cut into 8 wedges
1 English cucumber or 3-4 Persian cucumbers, sliced
1 small red onion, thinly sliced
6-8 oz fresh feta
A handful of olives
2 Tbsp extra virgin olive oil (Olivaio)
Juice from 1 lemon
Kosher salt

Directions

  1. In a large bowl, combine tomatoes, cucumber, and onion; add olive oil, lemon juice, and a pinch or two of salt and gently toss
  2. Transfer to a serving platter or bowl; top with olives and large chunks of crumbled feta
