Arrosto di Manzo (Beef Filet)

Arrosto is a classic second dish, one of those plates you need to learn how to cook in your life. Serve it with seasonal vegetables or potatoes or both. It’s a delicious recipe perfect for special dinners with a nice glass of red wine.
INGREDIENTS
- 3.5 lb top side of beef
- 2 carrots, roughly chopped
- 2 red onions, roughly chopped
- 2 sticks celery, roughly chopped
- 1 garlic bulb
- 1 bunch fresh rosemary
- Extra virgin olive oil (Olivaio)
- 1 tsp dried marjoram
- 1 tsp dried sage
- 1 tsp dried thyme
- Kosher salt
- Pepper
Directions
- Pull the beef from the refrigerator to temper and preheat the oven to 425 F
- Finely mince all leaves and herbs; place them in a small bowl and and season with salt and pepper; drizzle in extra virgin olive oil (EVOO) and thoroughly mix
- Break the garlic bulb apart, leaving the cloves unpeeled
- Put all the vegetables, garlic and herbs into the middle of a large roasting tray and drizzle with extra virgin olive oil (EVOO)
- Rub the herby sauce all over the meat; use a small knife to stab tiny holes in the meat then add some herb sauce inside each hole
- Place the beef on top of the vegetables; reduce the oven temperature to 400 F and cook for 1 hour
- When the beef is cooked to your liking, transfer it to a cutting board to rest for 10 min
