Beet and Citrus Salad

This dish is a great go-to when citrus is in season (late fall through early spring). It's refreshing, full of flavor, and absolutely beautiful. Feel free to use whatever oranges you find at the market β just make sure to use a variety! You can even add some grapefruit if you'd like.
INGREDIENTS
- 4 cups spinach or mixed greens
- 2 oranges, peeled and sliced
- 4-6 beets, steamed and sliced
- 1/2 red onion, thinly sliced
- 4 oz goat cheese
- 1 Tbsp red wine vinegar
- 3-4 Tbsp extra virgin olive oil (Olivaio)
- Salt
- Pepper
Directions
- In a large bowl, combine greens, orange slices, and beet slices
- Pour red wine vinegar into a small bowl; add salt and fresh ground black pepper; stir to dissolve. Use a fork or small whisk to beat in extra virgin olive oil (EVOO), a little at a time. Taste as you go and stop when it tastes right.
- Pour dressing over salad and gently toss; plate and top with goat cheese crumbles
