Classic Pesto

Pesto is a perfect sauce to pair with pasta, bread, fish, and vegetables. Though this recipe is traditional, it can be modified based on what you have on hand. Try throwing in some kale or arugula to get more greens in your diet. You can even use pistachios in place of traditional pine nuts. Just make sure you always use high quality organic extra virgin olive oil (EVOO)!

INGREDIENTS

2 cups fresh basil leaves (no stems)
2 tablespoons pine nuts
2 large cloves garlic
1/2 cup extra virgin olive oil (Olivaio)
1/2 cup freshly grated parmesan cheese
Juice from 1/2 lemon

Directions

  1. Combine basil leaves, pine nuts, and garlic in a food processor and process until very finely minced
  2. With the machine running slowly add the oil and process until the mixture is smooth; repeat with lemon juice 
  3. Add the cheese and process very briefly, until just combined
