Frittata is a classic Italian dish, similar to the french omelet. It's simple to make and there are countless variations. You can make it with zucchini, potatoes, or even spaghetti.

INGREDIENTS

8 eggs
1/2 cup pecorino, grated
1/2 cup parmigiano reggiano, grated
Extra virgin olive oil (Olivaio)
Salt
Pepper

Directions

  1. In a large bowl, softly whisk eggs with a fork; add the grated pecorino and parmesan; season to taste
  2. Heat a non-stick pan on low heat and add a thin later of extra virgin olive oil (EVOO); add the eggs and cook for 8 minutes, covering the pan with a lid
  3. Put the plate on the pan and flip it, then cook for an additional 8 minutes without the lid
