Lentil Soup

Lentil soup is a hot first dish that can easily become a hearty meal. It's particularly good for winter evenings and it's also a method for using lentils that you can carry through the year. Served here with high-quality extra virgin olive oil, this dish is filling and delicious. Feel free to top it with freshly made croutons!

INGREDIENTS

1 cup lentils
2 stalks celery, sliced
2 carrots, diced
1 white onion, chopped
2 potatoes, diced
2 cloves garlic, chopped
2 bay leaves
1 tp oregano, dried
1 tp basil, dried
1 Tbsp extra virgin olive oil (Olivaio)
Salt
Pepper

Directions

  1. In a large soup pot, heat extra virgin olive oil (EVOO) over medium heat
  2. Add onions, carrots, potatoes, and celery; cook, stirring occasionally, until onions are tender
  3. Stir in garlic, bay leaf, oregano and basil; cook for an additional 2 minutes
  4. Stir in lentils and add water and tomatoes (the water has to be 3 fingers above the lentils); bring to a boil
  5. Reduce heat and simmer for 1 hour
  6. Finish with a drizzle of extra virgin olive oil (EVOO) and season with salt and pepper
