Lentil soup is a hot first dish that can easily become a hearty meal. It's particularly good for winter evenings and it's also a method for using lentils that you can carry through the year. Served here with high-quality extra virgin olive oil, this dish is filling and delicious. Feel free to top it with freshly made croutons!
INGREDIENTS
- 1 cup lentils
- 2 stalks celery, sliced
- 2 carrots, diced
- 1 white onion, chopped
- 2 potatoes, diced
- 2 cloves garlic, chopped
- 2 bay leaves
- 1 tp oregano, dried
- 1 tp basil, dried
- 1 Tbsp extra virgin olive oil (Olivaio)
- Salt
- Pepper
Directions
- In a large soup pot, heat extra virgin olive oil (EVOO) over medium heat
- Add onions, carrots, potatoes, and celery; cook, stirring occasionally, until onions are tender
- Stir in garlic, bay leaf, oregano and basil; cook for an additional 2 minutes
- Stir in lentils and add water and tomatoes (the water has to be 3 fingers above the lentils); bring to a boil
- Reduce heat and simmer for 1 hour
- Finish with a drizzle of extra virgin olive oil (EVOO) and season with salt and pepper
