Octopus Salad

Octopus salad is a tasty appetizer typical of Mediterranean cuisine, widespread especially in the regions of Southern Italy. Prepared mainly in summer, accompanied by a nice glass of chilled white wine, it can also be used as a second dish if potatoes are added.
INGREDIENTS
- 800 g octopus
- 2 garlic cloves, one whole and one diced
- 1 lemon
- 1 Tbsp extra virgin olive oil (EVOO)
- 1 Tbsp white wine
- 2 Tbsp parsley, steams removed, coarsely chopped
- Salt
- Pepper
Directions
- Flavor a large pot of lightly salted water with wine, garlic, and juice from 1/2 lemon; bring to a boil
- Pound the octopus to tenderize it and wash it several times under running water
- When the water is boiling, add the octopus and cook for about an hour or until it's tender
- In the meantime, prepare a marinade with parsley, diced garlic, remaining lemon juice, salt, pepper and extra virgin olive oil (EVOO)
- Once the octopus is cooked cut it into small pieces; add the marinade and thoroughly mix; if necessary, season with salt; serve chilled
