Here is a recipe for Neapolitan style pizza – the original one. Like any famous dish, there are many versions featuring various ingredients and different steps. This is the recipe for the best homemade pizza.
INGREDIENTS
- 4 cups 00 flour
- 2 Tbsp fine kosher salt
- 1 tsp active dry yeast
- 1.5 cups water
- Cooking spray
- 1 can whole peeled Italian tomatoes
- 1/2 ounce fresh buffalo mozzarella or fresh mozzarella, sliced
- Handful basil leaves
- 4 Tbsp extra virgin olive oil (EVOO)
Directions
- To make dough, combine flour, salt, and yeast in a large bowl and mix to combine. Add water and continue mixing. It should come together into a unified mass that doesn’t stick to the bowl or your hands too much. If the mixture sticks, add 1 Tbsp of flour. If it’s too dry, add 1 tbsp of water.
- Cover the bowl with plastic wrap and refrigerate for at least 8 hours (it can be refrigerate for up to 72 hours)
- When ready, transfer the dough to a floured work surface
- Divide dough into 4 sections, cover with plastic, and rest for 2 hours
- In the meantime, make the sauce by pushing the tomatoes through a food mill or strainer until its a chunky liquid
- Preheat oven to 475 F
- On a well-floured surface, stretch out each ball of dough into a 10 inch circle, using a rolling pin if needed (make sure that the dough is not sticking; use flour as needed)
- Spread about 1/3 cup of sauce over it, leaving the borders empty (1-2 inches)
- Top with 1/4 of the mozzarella slices, a few basil leaves, and drizzle with 1 Tbsp of extra virgin olive oil (EVOO)
- Transfer pizza to the oven and bake about 7-10 minutes, until dough is golden brown and cheese has melted
- Repeat with remaining dough balls and ingredients
