Pollo e Patate al Forno (Baked Chicken and Potatoes)

Chicken and potatoes is a typical second dish in Italy, and it may be one of the most classic plates of the peninsula. It's very easy to make and perfect for any occasion.

INGREDIENTS

2 lbs chicken breast
4-6 medium potatoes, diced
1 yellow onion, chopped
1-2 garlic cloves, minced
1/2 cup parmiggiano cheese, grated
Handful of parsley, stems removed, coarsely chopped
Extra virgin olive oil (Olivaio)
Water or white wine
Salt
Pepper

Directions

  1. Preheat oven to 375 F
  2. In a large bowl, mix together onion, garlic, parsley, and parmiggiano; add a generous amount of extra virgin olive oil (EVOO) and season with salt and pepper
  3. In a baking dish, arrange the chicken and potatoes, top with onion mixture and any remaining of olive oil from the mixing bowl; add a splash of white wine or water
  4. Roast for an hour, flipping half way through, or until the chicken and potatoes are throughly cooked and golden brown; rest prior to serving
