Chicken and potatoes is a typical second dish in Italy, and it may be one of the most classic plates of the peninsula. It's very easy to make and perfect for any occasion.
INGREDIENTS
- 2 lbs chicken breast
- 4-6 medium potatoes, diced
- 1 yellow onion, chopped
- 1-2 garlic cloves, minced
- 1/2 cup parmiggiano cheese, grated
- Handful of parsley, stems removed, coarsely chopped
- Extra virgin olive oil (Olivaio)
- Water or white wine
- Salt
- Pepper
Directions
- Preheat oven to 375 F
- In a large bowl, mix together onion, garlic, parsley, and parmiggiano; add a generous amount of extra virgin olive oil (EVOO) and season with salt and pepper
- In a baking dish, arrange the chicken and potatoes, top with onion mixture and any remaining of olive oil from the mixing bowl; add a splash of white wine or water
- Roast for an hour, flipping half way through, or until the chicken and potatoes are throughly cooked and golden brown; rest prior to serving
