INGREDIENTS
- 4 chicken breasts, boneless
- 1 Tbsp extra virgin olive oil (Olivaio)
- 2 Tbsp lemon juice
- 3 Tbsp chicken stock
- 3 Tbsp fresh parsley, coarsely chopped
- Flour
- Salt
Directions
- Cut each chicken breast horizontally into 2 pieces; lightly coat with flour and season with salt and pepper
- Heat extra virgin olive oil (EVOO) in a large skillet over medium heat; and add the chicken and gently fry for 5 minutes on each side, until tender; remove from heat
- Add the lemon juice and stock to the hot pan and bring it to a boil, stirring for 2 minutes; add the parsley and stir
- Pour the sauce over the chicken and serve
