Pollo e Limone (Lemon Chicken)

INGREDIENTS

4 chicken breasts, boneless
1 Tbsp extra virgin olive oil (Olivaio)
2 Tbsp lemon juice
3 Tbsp chicken stock
3 Tbsp fresh parsley, coarsely chopped
Flour
Salt

Directions

  1. Cut each chicken breast horizontally into 2 pieces; lightly coat with flour and season with salt and pepper
  2. Heat extra virgin olive oil (EVOO) in a large skillet over medium heat; and add the chicken and gently fry for 5 minutes on each side, until tender; remove from heat
  3. Add the lemon juice and stock to the hot pan and bring it to a boil, stirring for 2 minutes; add the parsley and stir
  4. Pour the sauce over the chicken and serve
