Roasted Bell Pepper and Feta

INGREDIENTS

2 red bell pepper, each cut into 8 even pieces
6-8 oz fresh feta cheese
1 Tbsp extra virgin olive oil (EVOO)
Kosher salt

Direction

  1. Preheat oven to 450 F
  2. In a large bowl, toss bell pepper in extra virgin olive oil (EVOO) and season with a pinch or two of salt
  3. Place bell pepper on baking dish and cook for 20 minutes, flipping once about 10 minutes in
  4. Remove peppers from oven, add large chunks of feta, and cook an additional 8-10 minutes, until feta is warm and bell pepper is roasted
