White Fish with Tomatoes

White fish with tomatoes is an easy and healthy dish to make. It's ready in less than an hour and it's great for a special dinner with white wine.

INGREDIENTS

1 lbs sea bass or red snapper fillets
2 garlic cloves, minced
12 cherry tomatoes, halved
4 Tbsp extra virgin olive oil (Olivaio)
1 tsp red pepper flake
Small handful of parsley, stems removed, coarsely chopped
3 cups of water
Salt

Directons

  1. In a saute pan, heat extra virgin olive oil (EVOO) over medium-high heat; add garlic and red pepper flake and cook until the garlic is browned, about 2-3 minutes
  2. Add the tomatoes and cook until they start to soften, about 5 minutes
  3. Add water, parsley, and a pinch of salt; reduce the heat to medium-low and simmer for 15 minutes
  4. Add the fish, cover, and cook for 15-20 minutes
